Der Chefkoch setzte seine Ausbildung als Souschef im L&#8217;\u00c9trier du Royal Barri\u00e8re in Deauville fort, dann im Pavillon Ledoyen in Paris an der Seite von Christian Le Squer (***), wo er seine Pr\u00e4gung perfektionierte und Exzellenz lernte.<\/p><p>Seine Liebe zu seiner Heimatregion f\u00fchrte ihn zur\u00fcck nach Stra\u00dfburg, wo er drei Jahre lang das Kommando am Herd des 1741* \u00fcbernahm und einen Stern im Guide Michelin erkochte.
